Quick and Easy Fried Rice
Ingredients:
For Rice :
½ cup - Long grain rice
1 cup - Water
1 tsp - Ghee (clarified butter)
For Fried rice:
2 cup - Vegetable stir fried (half packet)
1 - Green chilli minced
1 tsp - Ginger minced
1 tsp - Garlic minced
½ - Onion sliced vertically
½ - Green bell pepper
½ - Red bell pepper
¼ cup - Soya bean chunks
2 tbs - Soya sauce
1 tsp - White vinegar
½ tsp - Shezwan sauce or red chilli sauce (optional if you want more spicy)
2 tsp - Oil
Pre – Preparation:
1. Soak the rice for about 30 minutes in hot water.
2. In a pan take ghee and heat it on high.
3. Drain all the water from rice.
4. Add rice in hot ghee and sauté it for a minute.
5. Add 1 cup of water for ½ cup of rice.
6. Add ½ tsp of salt and mix it well.
7. Cook it on high until half the water remains.(bubble starts coming)
8. Put on the lid now and cook it on very low flame until all the water evaporates.
9. Keep it aside.
Preparation:
1. Take 2 tsp oil in a pan and heat it on high.
2. Add green chilli, ginger, garlic, onion, green and red bell pepper. Sauté it for a minute.
3. Add half packet (around 2 cups) of vegetable stir fry (i.e. carrot, cabbage, bean sprout, onion) and mix it well.
4. Add Soya bean chunks cut into small pieces.
5. Add Soya sauce, vinegar and Shezwan sauce.
6. Add salt to taste. Mix it well.
7. Vegetable stir fried rice is ready to serve.
8. Enjoy it with Manchurian soup.
