Ingredients :
1 cup - Semolina (coarse)
1.5 cup - Sugar
1.5 cup - Water (hot)
1.5 cup - Milk
¼ cup - Ghee (clarified butter)
¼ tsp - Cardamom powder
¼ tsp - nutmeg powder (optional)
1 tbs - Cashew nuts broken
1 tbs - Golden raisins
Preparation :
- In a saucepan take Ghee and heat it on a medium high.
- When ghee melts add semolina and roast it stirring continuously.
- When semolina is roasted it will give nice aroma.
- Add hot water and milk in roasted semolina. Mix it well.
- Stir it continuously (to avoid burning) until all the water evaporates.
- Now add sugar and mix it well.
- When sugar melts it starts bubbling and may start splattering. So take extra care while stirring.
- When mixture becomes dry add cardamom powder, nutmeg powder, cashew and golden raisins. Mix it well.
- Suji halwa is ready to serve.
