Suji halwa (Semolina Halwa)

Ingredients :

1 cup     - Semolina (coarse)
1.5 cup  -  Sugar
1.5 cup  -  Water (hot)
1.5 cup  -  Milk
¼  cup   -  Ghee (clarified butter)
¼ tsp     -  Cardamom powder
¼ tsp     -  nutmeg powder (optional)
1 tbs      -  Cashew nuts broken
1 tbs      -   Golden raisins


Preparation :

  1. In a saucepan take Ghee and heat it on a medium high.
  2. When ghee melts add semolina and roast it stirring continuously.
  3. When semolina is roasted it will give nice aroma.
  4. Add hot water and milk in roasted semolina. Mix it well.
  5. Stir it continuously (to avoid burning) until all the water evaporates.
  6. Now add sugar and mix it well.
  7. When sugar melts it starts bubbling and may start splattering. So take extra care while stirring.
  8. When mixture becomes dry add cardamom powder, nutmeg powder, cashew and golden raisins. Mix it well.
  9. Suji halwa is ready to serve.
